PANKO BREADED CHICKEN WITH SWEET CHILI SAUCE
Ingredients:
½ cup 3 Dragons Gluten Free Sweet Chili Sauce
1 tsp fresh ginger, minced
1 tsp fresh garlic, minced
1Tbsp soy sauce
1 Lb chicken breast, boneless, skinless
1 ½ tsp salt
½ tsp black pepper
1 tsp paprika
¾ cup flour
2 eggs, beaten
3 cups panko bread crumbs
Avocado oil spray
3 green onions, chopped (optional)
Sprigs of cilantro, chopped (optional)
Directions:
Preheat oven to 425°F.
Season chicken with salt, black pepper, and paprika.
Place flour in a shallow bowl, eggs in a second shallow bowl, and panko bread crumbs in a third shallow bowl.
One by one, add a chicken breast to the flour, then egg wash, followed by the panko bread crumbs.
Place breaded chicken on parchment lined sheet pan. Spray generously with avocado oil.
Bake in oven for 20-25 min until the chicken is cooked all the way through.
Combine sweet chili sauce, ginger, garlic, and soy sauce in a small saucepan and heat on medium-low.
Serve chicken warm with Sweet Chili Sauce drizzled on top. Garnish with chopped green onion and/ or cilantro if desired.
