COCONUT HALIBUT WITH SWEET CHILI SAUCE
Ingredients:
4 (4 oz each) halibut filets
2 cans (15 oz each) full-fat coconut milk
½ tsp black pepper
2 tsp salt
½ cup 3 Dragons Gluten Free Sweet Chili Sauce
1 ½ cups plantain chips, crushed
Sprigs of cilantro, chopped (optional)
Directions:
Add coconut milk, salt, and pepper to a wide saucepan or saute pan. You will need enough surface area for the liquid to surround the fish and cook it.
Bring the coconut milk mixture to 175-180°F, a light simmer.
Add halibut filets to the poaching liquid.
Cook for 6-10 minutes until halibut is at desired doneness.
Serve warm, topped with a generous drizzle of Sweet Chili Sauce, crushed plantain chips, and cilantro.
