ISLAND SWEET & SOUR CHICKEN NUGGETS

INGREDIENTS

1 cup 3 Dragons Classic Sweet & Sour Sauce

2 lb chicken breast meat, cut into 1 ½ inch pieces

1 Egg

1 ½ cups Corn Flake crumbs

1 ½ cups flour

1 tsp salt

1 tsp pepper

1 can (20 oz) pineapple chunks

1 red pepper (optional)

1 green pepper (optional)

Oil for frying (about ¼ inch deep)

DIRECTIONS

  1. Place egg in bowl and beat well. Add chicken pieces and stir to coat.

  2. Season with salt and pepper

  3. In another bowl, combine Corn Flake crumbs and flour

  4. One at a time, roll chicken pieces in Corn Flake/flour mixture and coat well

  5. Heat oil in large skillet and fry chicken nuggets until golden brown, or chicken is thoroughly cooked. Nuggets can be made ahead and warmed before serving.

  6. Cover chicken nuggets with 3 Dragons Classic Sweet & Sour Sauce just before serving and garnish with pineapple chunks, green peppers, and red peppers
