ISLAND SWEET & SOUR CHICKEN NUGGETS
INGREDIENTS
1 cup 3 Dragons Classic Sweet & Sour Sauce
2 lb chicken breast meat, cut into 1 ½ inch pieces
1 Egg
1 ½ cups Corn Flake crumbs
1 ½ cups flour
1 tsp salt
1 tsp pepper
1 can (20 oz) pineapple chunks
1 red pepper (optional)
1 green pepper (optional)
Oil for frying (about ¼ inch deep)
DIRECTIONS
- Place egg in bowl and beat well. Add chicken pieces and stir to coat. 
- Season with salt and pepper 
- In another bowl, combine Corn Flake crumbs and flour 
- One at a time, roll chicken pieces in Corn Flake/flour mixture and coat well 
- Heat oil in large skillet and fry chicken nuggets until golden brown, or chicken is thoroughly cooked. Nuggets can be made ahead and warmed before serving. 
- Cover chicken nuggets with 3 Dragons Classic Sweet & Sour Sauce just before serving and garnish with pineapple chunks, green peppers, and red peppers
