VEGETABLE TEMPURA

3 Dragons Vegetable Tempura

INGREDIENTS

1 ½ cups 3 Dragons Citrus Teriyaki Glaze

1 head Broccoli cut into large pieces

1 head Cauliflower, cut into large pieces

3 Carrots, cut into large pieces

1/4 lb Green Beans

1/2 lb Asparagus, cut into large sections

1 Sweet Potato, peeled and sliced

2 Egg Yolks

2 cups Ice Water

3 cups Rice Flour, Divided

1/8 tsp Salt

Oil for frying

DIRECTIONS

  1. Heat 2-3 inches of oil to 360 degrees.

  2. Prepare batter: Mix egg yolks, ice water, 2 cups of the rice flour and salt. Batter may be lumpy.

  3. Place remaining 1 cup of rice flour in shallow dish. Dredge vegetables in rice flour then dip in batter.

  4. Fry for 3-4 minutes or until crisp.

  5. Serve with Citrus Teriyaki Glaze for dipping.
